Green Pea Salad

This was, oddly enough, a childhood favorite of mine. I’m told it’s a southern thing as most of my northern friends have told me I am absolutely disgusting (and other variations of the same temperament!)  There are so many variations. None are wrong or right, it is all based on taste. Here is my take on one of my favorite recipes! Green Pea Salad   Ingredients 1 can of very early green peas 1-2 tablespoons of mayonaise 1 tablespoon of sweet relish 1/8 cup of bacon bits 1/4 cups shredded or cubed cheddar cheese   Directions Rinse the peas very well in cold water and drain. ‘Skinny’ Buffalo Chicken Dip

If you have ever checked out my recipes, you know I am a big fan of buffalo chicken dip. It is delicious and pretty much a necessity for our football days. Now that I am watching what I eat I was scared to make it. I mean it is pretty fattening. Then I had a bright idea to make a ‘skinny’ version. the two main fattening ingredients are able to be replaced and it cuts the calorie count down a ton! So here is the skinny buffalo chicken dip recipe! ‘Skinny’ Buffalo Chicken Dip Ingredients: 1 pound boneless, skinless chicken breast 2- 8oz packs of Fat-Free Cream Cheese, softened 3/4 cup of Franks Red Hot Pepper Sauce (you can use more or less to taste) 3/4 cup Fat-Free Ranch Dressing shredded cheddar cheese to cover (I didn’t use reduced fat cheese, but of course that would be ideal in the … read more

I don’t know about you, but our holidays seem to revolve around food in some way. I swear by Christmas evening I have put on a good 10 pounds. But who can resist the adorable decorated cookies, brownies, fudge, candy.. I’m sure your with me. Well this year I have made it my goal to avoid as much of the sweet stuff as possible in hopes of watching my weight a bit. Not to mention my oldest is starting to have a little too much weight as well so we really need to step up our game as parents to help him out. #JuicyBirdProject- Kikkoman Brining

I have always wanted to brine a chicken, but honestly never researched the best way to do it. Not sure if its pure laziness or just not wanting to mess up, but I never tried. I have often heard that brining poultry keeps it moist and flavorful which is a big plus for me! I am one of those that always fears my chicken won’t be cooked well enough and end up over cooking it! So, when ask to participate in the #juicybirdproject to brine a chicken with Kikkoman I was intrigued! I know a brine is a salt based mixture, so soy sauce definitely makes sense! The sodium content is pretty high in it. I have honestly never used Kikkoman for anything more than my pork fried rice and even then it was just a little packet from the Chinese restaurant. Wholesome Sweeteners Agave Syrups

We are big syrup people in my house. Nothing is better then a nice steaming hot pile of pancakes or french toast covered in syrup. We use flavored syrups in everything from milk to ice cream toppings and even in smoothies. So when I was given the chance to review Wholesome Sweeteners line of Agave syrups I was all for it. I wasn’t sure what to expect as I have never had agave in anything other than tequila. I just knew there was no way the two could even remotely taste the same! Agave is a plant that is grown primarily in Mexico and can be used many different ways. Wholesome Sweeteners uses the nectar from the blue agave to create their decadent syrups.
