Pasta Salad with Creamy Blue Cheese Vinaigrette Dressing

Color Your Summer, Kitchen Drawer Style!

What exactly did I choose? Well, Summer is almost upon us! So, I decided to design my drawer with items that not only add a beautiful splash of color (my drawers before really were boring!) but they will also prove extremely useful for my summer meals from burgers to corn on the cob, slicing and dicing my favorite fruits, to grating the perfect cheeses and chocolate for toppers. This drawer really says COOK SOMETHING DELICIOUS! Here is what I included (I’ll go left to right, top to bottom as best as possible. Click on any link to see the product on the Good Cook Website)-

Double Handed Colander, Stuffed Burger Press, Measure From Above 3 Piece Liquid Measuring Cup Set, Rotary Grater, Candy/Deep Fry Thermometer, The following Non Stick Knives from left to right- Chef’s Knife, Sandwich Knife, Santoku Knife, Utility Knife, and the Paring Knife, Silicone Spatulas, Egg Slicer/Chopper, Stainless Steel Silicone Tip Locking Tongs,  Measuring Spoons, and the Corn Skewers.

Pasta Salad with Creamy Blue Cheese Vinaigrette Dressing

Ingredients:

  • 1/2 lb of pasta ( I used Mueller’s Pot Sized Spaghetti)
  • 3/4 cup Olive Oil
  • 5 TBSP Balsamic Vinegar
  • 1 large, ripe tomato
  • 1 cucumber
  • 1/8 TSP black pepper
  • 1/4 TSP salt
  • 3/4 cup blue cheese crumbles

Directions

Boil Pasta according to package directions. Once cooked, drain pasta and rinse in cold water.

Chop your tomatoes into bite sized chunks.

Slice cucumbers into desired sized pieces. I love creating uniform slices of cucumber (and I can not accomplish this with a knife!) so I use my egg slicer to slice them. Then I turn them and slice again for pretty slices! The egg slicer has SO MANY uses in my house, it’s one tool I hate to be without!

egg slicerIn a large mixing bowl, add 3/4 cup of olive oil.

Add in your salt and pepper (you can add more to taste, I keep mine a bit mild so I can really taste the blue cheese!)

Add in your balsamic vinegar and mix well. Once the mixture is combined stir in the blue cheese chunks. Add in the noodles and toss to coat well. Refrigerate until ready to serve (tastes best cold!) We are serious cheese addicts in our house, so of course I had to top each plate with grated cheese to complete the dish!

Pasta salad with creamy blue cheese vinaigrette dressing is one of my favorite summer side dishes! Pair it with a spicy buffalo and blue cheese stuffed burger (Good Cooks Stuffed Burger Press makes this simple!) and a delicious ear of sweet corn on brightly colored corn skewers and you have the perfect colorful, Summer meal!
