Zaycon Buffalo Chicken and Loaded Potato Casserole

I have to admit it. Lately, I have become one of those crazed, Pinterest obsessed people. Never thought it would happen to me. But I am so tired of eating the same foods over and over. Now, I find a recipe I like, look up all the variations people have put to it, and then create the version that seems best suited to my family’s taste. Most have been a huge hit. (and when you are in a house full of the pickiest eaters known to man… that is a million dollar phrase!) This next recipe is no exception. The first time I made it, the boys asked for it “more and more and more!” (yes, even my 4 year old wanted more!) Prior to trying the recipe I was given a chance to try out Zaycon chicken breast and Oh. My. God! If you haven’t hear of them, make sure to read after the recipe and I’ll give a quick run down of who they are and what they do!

Buffalo Chicken and Loaded Potato Casserole

Ingredients

2 lbs boneless, skinless chicken breast, cut into 1 inch cubes
1 cup bacon, coked crisp and crumbled
1 lb bag of small red potatoes cut into 1 inch cubes
2tbsp garlic powder
1/2 tbsp fresh ground pepper
1 tsp salt
1/3 cup olive oil
1/4 cup ranch dressing
5 tbsp hot sauce
2 cups shredded cheddar cheese (or your families favorite cheese)
optional toppings- sour cream, ranch dressing, blue cheese crumbles, chives

Preheat oven to 450 degrees
In a large bowl mix together the olive oil, hot sauce, salt, pepper, garlic powder and ranch dressing.
Add the potatoes and stir to coat.
Use a slotted spoon to scoop out potatoes, leaving behind any extra olive oil/hot sauce mix. Add the potatoes to a greased 9X13 baking dish.
Add the diced chicken to the “left behind” olive oil/hot sauce mix and stir to coat all the chicken. Allow to marinate as the potatoes bake.
Bake the potatoes uncovered for 45-50 minutes, stirring every 10-15 minutes, until cooked through.
Remove from oven and top with cubed chicken, making sure to include all marinade in pan.
Cook for 15 minutes.
remove from oven and stir well. Chicken should be cooked through at this point. If not, return to oven in 10 minute intervals.
Once potatoes and chicken are thoroughly cooked, top with crumbled bacon and cheddar. Return to oven for 10-15 minutes until toppings are hot and bubbly.
Serve with desired extras for a delicious and satisfying meal!
